Lunchbox today is Ashtami Special 💕🌞 Last two weeks has been very hectic and the celebration is on in full mode. My mom is here, so the Ashtami puja had to be special. But little A has school, and can't eat much in the morning. So, it's best to pack the bhog in the lunchbox.

💮 #MUMMY FACE (bread #pizza) ~ Cut 2 slices of bread in round shape. Use pizza sauce and cheese strips to make mummy face. Microwave for 30secs on high. In morning rush I accidentally microwaved it for full min and look what it did to all the mummy bandages!!🤦🙈
💮 BLOODY FINGERS ( sausage) ~ used boiled #beetroot from yesterday to make nails.
💮BONES (cucumber) ~ this took most of my time as I don't have cutters so carved them individually using knife!

💮 Cheesy beetroot cutlets ~ Boiled 2 beets and 1 potato. Peeled and grated them. Mixed salt, cottage cheese, chopped green chilli, dry mango powder, roasted cumin powder. Shaped in the form of cutlet with small cube of cheese in middle. Dipped in flour-water mixture and then in bread crumbs. Shallow fried and tada!!! These are oh-so-gooey in the centre with melted cheese and outer crust is crunchy and are bursting with flavors goodness of beets!!!

💮 Pea and beetroot fritters ~ Puree of peas and beetroot mixed with home made cottage cheese, chopped onions, green chilli and salt and cooked on a pan drizzled with #desighee. These are so very soft and have just melt in your mouth kind of consistency. I call them power fritters💪. You name it and every nutrient is in it!

was  again a very rushed affair.
He keeps on pestering me to pack #magginoodles in his lunch which I completely ignore because of its obvious lack of any nutrition and it doesn't taste good when cold. But today I gave in to his demand for lack of time.
Normally I would cook maggi with veggies to compensate for its junk value but today was not going to be that day. Luckily I had pumpkin puree in my fridge which I was to use in making #pumpkin #kheer to participate in #teuko #fallfoodchallenge
 Added that in maggi noodles instead!!
Let's hope my son won't know about it.😀

💮 Sprouts ~ Just sautéed them for a min in ghee along with salt and asafoetida and added chopped onion and tomato on the top. That's today's protein fill.
💮 Maggi noodles ~ Cooked as directed on pack and added pumpkin puree while cooking and little #garammasala and #desighee for more flavour!
💮Banana ~ Because no washing or peeling or chopping needed🙈

#ayaanshlunchtoday 🍱  was  a very simple affair but one without compromising on flavor and nutrition.
Maid was on leave plus had a work deadline to meet, so packed this meal in a jiffy! During such times, eggs always come in handy. It was a 6-7min meal and it came back all polished. My son didn't even get to know that he ate sprouts 😀

💮 Sprouts and egg paratha ~ Seriously that was an on-the-spot improvisation! Made a multi grain paratha(flat bread). In another pan, made sprouts frittata and laid the paratha on it while frittata was still little wet so that it got stuck on paratha. Then I cut it into pizza like pieces😊
So it had everything from carbs to protein to iron.
💮 Banana ~ That's what was handy...and vitamins of course!
💮Dry fruits ~ For minerals and fatty acids.
