Got tired of my typical tofu scramble so I made some simple #vegan omelettes. 🍳🌱🍳

Chickpea flour with some seasoning, add in spinach and vegan chorizo (or whatever veggies you want) and cook it like you would a pancake. 🌱🍳πŸ₯ž It's an easy 10-minute breakfast recipe that is soy-free, dairy-free and most importantly free of harmful animal products. 16 hot sweaty trail miles βœ… hard to believe these trails are just short drive away from downtown Chicago! .

Trail runs are my favorite way to start the weekend. It's a refreshing, calming way to start the day- even though the miles are long I always feel energized afterwards. I enjoy the me time, I think it makes me more social in the afternoon. .

Tried out mango #nuunperformance and some chunks of a sweet potato peanut butter @phyterfood bar. Both helped me get through feeling energized despite the humidity. .

Almond butter and mango slices on toasted @foodforlifebaking flax bread with goji berries and @hippiebutter hemp seeds sprinkled on top. 🌱🌱 🌱

Sounds like an interesting combo but it makes for one big #superfood snack! Mangos and goji berries are full of vitamin A and C to keep the immune system strong, hemp seeds offer a lot of protein and omega-6 & omega-3 fatty acids for muscle growth and heart health.  And you all know how much I adore almond butter😍😍 I could (and have) eaten it by the spoonful. πŸ₯„πŸ₯„
