Made a bowl of hearty meal with homemade noodles and tomato egg, vegetable, fishcake and spoonful of crispy chilli oil to perk up the flavour

🍅 Tomato Egg Noodles
2 serving of noodles (手工面)
4 medium ripe tomato, cut into wedges
2 large eggs, lightly beaten
2 cloves garlic, minced
1 piece of fishcake, sliced
handful of Asian green
*600ml homemade chicken stock
chopped scallion
.
SAUCE
3 tbsp tomato sauce
1 tsp light soy sauce 
1/4 tsp dark soy sauce
1/4 tsp sesame oil
50ml chicken stock from above
.
Method
1. Whisk eggs with pinch of salt and 1 tbsp of milk/stock then add into a preheat non-stick pan and cook until almost set that resemble scrambled egg. Remove and set aside
2. In another pot blanch noodle, rinse and divide into 2 serving bowls
3. In the stock pan, sauté minced garlic with 1 tsp oil till fragrant. Add tomato and cook for a minute till slightly soft
4. Next add in sauce mixture, stir well and simmer for another minute
5. Lastly add in stock, egg, fishcake and veggie then bring it to boil on medium heat
6. Ladle soup mixture into serving bowls, top with chopped scallions and crispy chilli oil and serve immediately

📝note
- if using packed stock you can dilute 250ml stock with 300ml of water for lighter taste

Tonight’s dinner is inspired by @wensdelight who shared a link from @marionskitchen in our chat group this morning. So without hesitate I run through my kitchen pantry and managed to find most of the keys ingredients to whipped up this delicious Miso & Assorted Mushroom Pasta. I added oyster, shiitake and shimeiji mushrooms together with some baby asparagus and mini chicken sausages for extra bite

🍝Miso & Assorted Mushroom Pasta
2 servings (160-200g) dry spaghetti
30g unsalted butter
1 tbsp olive oil
300g mixed mushrooms of your choice
100g baby asparagus, cut into half
a few mini sausage, optional
2 garlic cloves, minced
1 tbsp organic white miso paste
2 tbsps of grated parmesan
extra parmesan on serving 
salt & pepper

Method
1. Cook spaghetti according to packet instructions
2. While cooking the pasta, heat up a large skillet with butter and olive oil over medium Low heat
3. Sauté mushrooms (add pinch of salt to the mushroom) and sausage for 2 minutes until both are slightly browned before tossing them for a couple of minutes
4. Remove the sausage and set aside then toss in garlic and cook for a minute before adding miso paste and 200ml of the pasta water
5. Stir and dissolve the miso paste then taste the sauce to justify where you still need to add any extra miso paste
6. With the sauce simmering on Low heat, add in the drained pasta and asparagus. Give it a quick toss until sauce thickened then stir in parmesan
7. Divide pasta into serving plates and top with sausage and extra grated parmesan. Serve immediately

📝note
- slightly modify the original recipe by reducing the amount the miso and mushroom use. Plus I add in extra asparagus and sausage

Tonight we are having Seafood Muifun with prawn, sliced mackerel, imitation crab stick, mushroom and napa cabbage. Top the rice with a few extra slices of fried mackerel upon the boy’s request

Ingredients
2 servings of cooked rice
4 large prawns, shell removed 
10 slices of mackerel
6 imitation crab stick
8 napa cabbage leaves, sliced 
some broccoli florets
2 fresh shiitake mushroom, sliced
2 slices ginger
2 cloves garlic, minced
1/2 brown onion (optional), sliced
1/2 tbsp oyster sauce
300ml hot water
1 egg
.
Method
1. Preheat a skillet with 1 tbsp of oil then sauté garlic, onion and ginger till aromatic. Add mushroom and cabbage and cook on medium Low heat for 2-3 minutes till veggie turns soft
2. Next add prawn and crab stick plus splash of cooking wine and mix well
3. Season with 1/2 tbsp of oyster sauce follow by 300ml of hot water
4. When it comes to boil add in broccoli and blanched for a minute. Remove and add in sliced fish to cook for another minute
5. Lastly thicken sauce with some cornstarch solution. Crack in an egg, give a quick stir and turn off the heat
6. Season with ground pepper and spoon the mixture over the cooked rice and serve immediately
.

School holidays is a great chance to spend some hand-on bonding time with the kids. Today we made crunch Chocolate Chips Cookies & Pandan Milk Loaf

🍫 Chocolate Chips Cookies
160g butter, soften
100g brown sugar
1 egg, lightly beaten
180g cake flour 
15g Dutch processed cocoa powder
I tsp baking powder
80g chocolate chips
.
Method
1. Using a hand whisk cream soft butter and sugar till combined
2. Next whisk in beaten egg in 2-3 batches
3. Sieve cake flour, cocoa powder & baking powder into the butter mixture then using a spatula to fold the mixture till just bind together
4. Lastly stir in chocolate chips and drop 1 ice cream scoop each of batter on baking tray lined with parchment paper
5. Bake in 180 degree oven for 15 minutes or until brown (cookies will crisp when cool), remove to cooling rack

Breakfast today is Oatmeal Coconut Pancake using the new #AyamBrand Super Light Coconut Milk (5% fat) that enhances with coconut water. For the batter I blend rolled oats into powder then mixed with eggs, chai seeds & coconut milk
.
I also prepare some fruit sauce with the leftover coconut milk and honey to serve with the pancake
.

🥞 Oat Coconut Pancake
150g oatmeal flour
120ml Super Light coconut milk
2 egg yolks
2 egg whites 
1 tbsp chai seeds
1 tsp baking powder
pinch of salt

Method
1. In a mixing bowl mix in oatmeal flour, baking powder, salt & chai seeds
2. Next whisk egg yolks for a few seconds then top with 120ml of coconut milk
3. Stir egg liquid into the flour mixture and mix well
4. Whisk egg whites till soft peak then fold into flour mixture in 2-3 batches. Lastly stir in some blueberries
5. In a non-stick pan, grease with butter or coconut oil then ladder 1/4 cup batter into the pan and cook over Low heat till browned on both sides
6. Repeat till the batter till it finished then serve pancakes with fruit sauce
.
🍓Fruit Sauce
1/2 cup of berries of your choice
150ml of coconut milk
1 tbsp of honey
.
Method
1. Cook berries on Low heat for 30 seconds before adding coconut milk
2. Simmer for a minute or two, remove pan from heat and stir in honey till dissolve
.
📝 note
Blend 150g rolled oat into powder 50g of the oatmeal flour can be replaced by cake flour for a fluffier texture
