A standing rib roast is probably my favourite holiday dinner. Succulent and juicy. Sharing this totally do-able recipe for one with a delicious herb crust. Also a recipe for mostly make-ahead crispy smashed potatoes (you boil them, then smash them and bake in a hot oven until crispy and golden on the outside, but still creamy on the inside - YUM). Pumpkin pancakes with apples in spiced honey caramel! See, what's happening here is that I'm pretending to be fancy when really the pancakes have been in my freezer for a month and the topping is just apples and a cinnamon stick simmered in butter and honey until soft.
