We are branching out! Puntarelle has been a fun new chicory in our lineup this year. This Roman specialty is grown for its tender, crunchy stalk and shoots. What started as leafy, dandelion-looking plants in August sent up tall, hollow stalks in September. It sure feels weird to wait for something to bolt before harvesting it.

The stalks require significant prep work in the kitchen. Slide right for pictures. Sliced into matchsticks and soaked in ice water until they curl, puntarelle is transformed into a mild, crunchy salad. Add a pungent anchovy garlic vinaigrette for “puntarelle alla romana,” and it’s perfection. Pretty much anything that’s a vehicle for anchovy is a win around here. 🐟Thanks @uprising.seeds for the seeds!
