The meal that am gonna stuff myself with, will be split and eaten as 2 meals.

Flaxmeal Broccoli Paratha
Madras Egg Curry
Pumpkin Soup
Salad
Buttermilk

What can make a person happier than a perfectly stuffed paratha with a gluten free grain on a debut. With good dose of butter topped, ate this for my brunch. Used yesterday's​ garlic roasted broccoli for the stuffing.

Also a special mention about this ghee floating Madras egg curry with little masalas, fresh coconut milk it turned out to be the best curry have ever made.

Recipe for Madras Egg Curry:
Eggs - 4, hard boiled
Onion big - 1, chopped
Tomato - 1, chopped
Green chilli - 2, slit
Curry leaves	- 2 sprigs
Ginger and Garlic - 1 tsp, crushed
Kashmiri chilli powder - 1/2 tsp
Turmeric powder	- 1/4 tsp
Pepper powder - 	1/2 tsp
Coriander powder - 1/2 tsp
Bay leaf - 1
Cardamom - 1
Clove - 1
Cinnamon stick - small piece
Fennel seeds - 1/4 tsp
Thick coconut milk - 1/4 cup
Ghee - 2 tbsp

Heat ghee in a pan add aromatics, saute don't burn them. Add onions, green chillies, curry leaves, ginger garlic saute until color changes a bit.

Add tomatoes, spice powders and cook in medium heat until ghee starts to float on the sides.

Add boiled eggs, coconut milk simmer in low heat until well combined and switch off the heat. .

Drumstick soup / Murungakai Rasam
Palak paneer with extra butter
Broccoli stir fry with roasted garlic
Cluster beans stir fry / Kothavarangai kari
Cucumber sticks

For all those who think LCHF (low carb high fat) is complicated, it ain't so. Simple everyday food with few deletions and some inclusions it works absolutely like a breeze. I do include lots of country / local vegetables for lunch especially. This is not a full single meal for lunch, this was eaten for 2 meals.

Broccoli Stir Fry Recipe:
Broccoli, boiled until 80%
6 pods garlic, finely chopped
1 tsp - Red chilli flakes
1 tbsp - Butter / Oil
Salt

Heat butter / oil in a pan add the garlic and fry for 2 mins until it gets roasted. 
Add broccoli, salt and red chilli flakes saute well until it turns crunchy.

Recipe for Drumstick Rasam:
Drumsticks 2 long ones, boiled and flesh removed
Rasam powder - 1 tsp
Pepper powder - 1/4 tsp
Jeera powder - 1/4 tsp
Garlic – 3 pods finely chopped
Onion - 1/4 cup, chopped 
Tomatoes - 1 no, chopped 
Mustard Seeds - 1/2  tsp
Cumin Seeds - 1/2 tsp
Ghee – 1 tbsp
Salt
Asafoetida - fat pinch
Curry Leaves
Coriander 
Heat ghee in a pan crackle mustard, jeera, hing, curry leaves, add garlic, onions and saute until the color changes.

Add tomatoes and cook till it softens.

Add drumsticks flesh finely chopped, rasam powder, pepper powder, jeera powder, salt and bring to gentle boil in low heat.

Sprinkle fresh coriander and serve hot.

My brunch on the table, Tacos / Wrap anything it could be termed as

Coconut flour wrap (homemade) 
Tandoori gobi, pan fried
Kachumber with jalapenos
Mint dressing
Feta Cheese
Chocolate nut milk with cinnamon

Marinated boiled gobi in almond meal, kashmiri chilli powder, coriander powder, jeera powder / tandoori masala, salt, tbsp olive oil and pan friend in butter until it turned crunchy and golden.

Hung curd mixed with mint, green chilly, salt mixture for the dressing.

Kachumber got a addition of chopped jalapenos for a pico de gallo kinda feel.

All these were assembled on the roti topped with crumbled feta cheese with a squeeze of lime and devoured.

Also made mixed nut milk with unsweetened cocoa powder, some cinnamon dusting on top.

The #lchf vegetarian meal that was made to satiate our Sunday cravings.

It was totally an unplanned meal, after a strenuous Sunday workout S needed the full plate lunch.

Stuffed Bitter gourd
Paneer Butter Masala

Buttermilk
Coconut Flour Roti from @headbangerskitchen

Smoky roasted, mashed eggplant with good dose of ghee, half a onion, one tomato, spices and salt.

Roasted grated coconut, onions with spices stuffed into de seeded small bitter gourds and pan fried until they were cooked.

For the Paneer Butter Masala, base made from de skinned tomatoes, tossed melon seeds, ginger, green chillies added to butter in a pan cooked until they thickened with kashmiri chilli powder, salt, paneer cubes and crushed kasuri methi.

Roti made from coconut flour + pysillium husk + salt + warm water kneaded to soft dough rolled and cooked on a tawa.

With our daily allowance, a glass of thin buttermilk for lunch 😉

Moody weather switches on the hunger mode instantaneously.

Paniyaram with Raw onion chutney, paniyaram made with coconut flour 2 tbsp + almond flour 1 tbsp, psyllium husk 1 tbsp, eggs 2, onions, green chillies, coriander, salt and pepper.

Also made a cup of hot chocolate with full cream and unsweetened cocoa powder (not in pic)

Rainy evenings call for Bajji Milagai Cheese Poppers (my version of jalapeño poppers) used a mix of Ricotta and Aged Gouda with mixed herbs, chilli flakes, salt for the stuffing and baked.

These are not processed / commercial cheese hence including in our diet, wish I had mozzarella to make these, for tat golden top.

Also made mayonnaise eggless, before i could whip it power went off so a thinny mayonnaise.

Mayonnaise Recipe:
In a processor / beater blend 1 cup fresh cream, 3 tbsp Olive oil, salt, pepper, 1/2 tsp Italian herbs, 1/2 tsp garlic powder until it turns thick n creamy. (any choice of herbs / flavorings can be added, garlic powder, herbs can be skipped too) .

Soul filling meal that was cooked and packed for couple of my friends yesterday.

Faux Paneer Biryani / Pulao, made with cauliflower rice, whole spices, bunch of mint, corinader with just half a tomato and ghee tossed paneer.

Biryani Kathirikai / Brinjal gravy especially made for biryani, with roasted sesame methi seeds and good amount of spice powders and cooked in ghee.

Mixed Vegetable Raitha, with roasted jeera powder, whisked curd, tri colored bell peppers, onion, cucumber.

Mixed Nuts Ladoo, almonds walnuts, melon seeds, chia seeds ground to coarse to smooth texture, hot ghee poured over and rolled into small ladoos.

On to the lunch boxes
Methi Paneer semi dry, used some leftover pav bhaji powder to make this simple onion, tomato, ginger based dry curry

Gobi Tawa Masala, boiled cauliflower marinated in spices and tawa fried until roasted. Sautéed onions, ginger garlic paste, tomato puree with dry spices until well cooked added a dash of cream, fried gobi and finished with fresh coriander

Flax Meal Roti, ground flax seeds, physilium husk, salt, ghee kneaded to soft dough and rolled safely tat it doesn't break and tawa toasted with ghee

Mixed Salad with EVOO dressing Buttermilk

These boxes makes 3 meal of ours, also had a glass of mixed nut milk before my cross fit training this morning.

Gobi Tawa Masala Recipe:
Cauliflower - as per need
Onion - 1/2 cup
Tomato puree - 1 cup
Ginger n Garlic Paste - 1 tsp
Cumin Seeds - 1/2 tsp
Red chilli powder - 1 tsp
Coriander powder - 1/2 tsp
Garam Masala - 1/4 tsp
Kasuri Methi - 1/4 tsp
Salt as reqd
Butter / Ghee / Oil - 3 tbsp
Milk / Fresh Cream - 2 tbsp

In a bowl add boiled cauliflower florets, add 
Red Chilli Powder - 1 tsp
Coriander and Cumin powder - 1/2 tsp each
Or just add 1 tbsp tandoori masala
Salt as reqd marinate well with a tsp oil.

Heat 1 tbsp ghee / oil in a pan and fry the florets until well charred and remove.

Heat 2 tbsp ghee / oil add cumin, onions, ginger garlic paste and saute until the onion changes its color.

Add tomato puree, red chilli, coriander powder, salt cook till oil starts to seperate.

Add fried cauliflower florets, kasuri methi, garam masala give a mix, add milk / cream cook in lowest heat, sprinkle fresh coriander and switch off the heat.

Masala Uthappam, Coconut Walnut Chutney, Almond Milk for our #lchfbreakfast

Faux uthappam I could term it as coz no rice flour no millet flour, jus couple of eggs with coconut flour, lots of onions, green chillies, chilli powder, turmeric, salt, hing, lots of fresh coriander and cooked in ghee.

I have to thank @spiceindiaonline for the walnut coconut chutney recipe, our dose of walnuts for the day went into the chutney such a creamy one, and finished licking off the left overs from the bowl as well.
