Grilled Flank Steak is as easy as it gets when it comes to putting an easy but impressive super low carb  meal on the table. 
I added 1 bottle of @simplegirlsite Simple Girl Balsamic Dressing/Marinade with the flank steak in the refrigerator and left it to marinade all night and day. I removed it from the marinade about one hour before we ate so that meat could come up to room temperature.  I seasoned both sides with Herbamare seasoning then Mr. LC worked his magic on the grill. Just a few minutes on each side.  Then on the board it went to rest for a few minutes so that the juices could evenly distribute.

No-Bake Low Carb Creamy Peanutty Bites⁣⁣
makes approximately 30⁣⁣
⁣⁣
1 1/2 c Full Fat Cream Cheese, room temp⁣⁣
1/2 c All Natural No Sugar Added Peanut Butter *see note below*⁣⁣
1/4 c. Powdered (confectioners) low carb sweetener-I used Lakanto⁣⁣
10 drops of liquid Monkfruit sweetener-I used Lakanto⁣⁣
1 8 oz bag of Lolli's Low Carb Granola, Peanut Butter Macadamia Flavor⁣⁣
⁣⁣
1.  Finely crumble the bag of Lolli's Granola.  This can be done by hand or using an immersion blender or food processor.  Set aside in medium bowl.⁣⁣
⁣⁣
2.  Place all of the other ingredients in large bowl and whip together with a hand held mixer until well incorporated and creamy. ⁣⁣
⁣⁣
3.  Working quickly, roll equal amounts of cream cheese mixture between your palms, into 30 balls.  Then roll the balls into the granola, coating all sides. ⁣⁣
⁣⁣
4.  Place in an airtight container and refrigerate until cold and set. *NOTE* I use the brand Crazy Richard's All Natural 100% Peanuts Creamy Peanut Butter.  Before using peanut butter make sure it's at room temp.  I pour off the oil into a bowl, stir peanut butter, use what I need and replace oil.
Breakfast tacos this morning.  YUMMY! I am so going to miss these @crepini_healthywraps when I leave California. ☀️ They've become part of my low carb/keto program now.  I hope that I am able to find them when I get back to Ohio.  I can and have made low carb crepes before, however, THEY ARE WORK. The convenience of these Crepini's fit right into my lifestyle. 🌸

This morning I filled the Crepini's with eggs, bacon and just a bit of cheddar cheese. Jalapeno Popper Taco Salad for the win!⁣

Jalapeno Poppers is one of those foods that I've been eating from the very beginning of my low carb/keto journey.  Well over a decade now.  Without the breading and filled with a yummy cream cheese mixture and topped with cheese and real bacon bits.  Putting bacon bits on the top makes them crunchy.  A real special treat without a doubt.  And every once in a while we will put the poppers on top of our taco salad like we did today. ⁣

For both the taco meat and the seasoning to fill the poppers I used my homemade taco seasoning.  I make triple batches so I have it whenever it's needed. LowCarberista’s No Sugar Added Taco Seasoning⁣

1/4 c Chili Powder⁣
1 TBLS Ancho Chili Powder⁣
5 tsp Paprika⁣
4 tsp Ground Cumin⁣
2 tsp Dried Onion Powder⁣
2 tsp Dried Oregano⁣
⁣
Mix all together and store in an airtight container.⁣
⁣
For the Poppers I just take 8 oz room temp cream cheese and add a tablespoon of the taco seasoning, stir together well then set aside.  I then clean and cut in half lengthwise the jalapeños. With a spoon I scrape out the seeds and veins.  Using my hands (with food prep gloves) I just fill each pepper with the cream cheese mixture, place on a cookie sheet and bake at 350 degrees for 20 min. I hope that everyone is so far having a nice and relaxing weekend.  Anyone have any fun plans?  I just wanted to share with you one of the ways during the warmer months that I keep my low carb lifestyle simple and cook-free during the season where life in general seems to pick up.  Less time in the house, more time outside.  Allowing fun and relaxation with family and friends.  And if you're lucky enough, a bit of gardening. 
Low carb/keto snack plates is one of the ways that I keep it easy peasy.  Think cut up veggies, finger foods, slices of cheeses and meats.  And even make ahead cold salads such as tuna and chicken salad. 
Lunch today was a few slices of cucumbers, yellow bell peppers, 1 oz of feta, kalamata olives, and a couple of @crepini_healthywraps filled with Smoked turkey with added mustard.

I received a few messages about tracking.  Do you track macros?  If so, which one do you use and why?⁣

We have some new faces around here that are newer to a keto/low carb lifestyle and are trying to learn the basics. So, let's help them out. 😊⁣

Yes, eggs do have carbs.  And if you are keeping things strict you should count those carbs.  I had one message in particular asking why their tracker wasn't registering the carbs. Well, there are a couple of answers for that. ⁣
⁣
One, US nutrition laws say that if a food (per serving) is less than 0.5 grams of carbs  then the food companies can list it as 0 carbs on the package.  Remember, *most* foods have carbs.  Even if it's just a trace amount. ⁣
⁣
Two, when you put a food in your carb tracker, if you are choosing the option that is already preset in the app for a particular brand of food, then that is what will go into your daily food diary.  For example, if I choose that I ate 3 large EggLands Best eggs, it will come up as zero carbs.  Because that is what EggLands best has on their nutrition label.  When in reality there is actually about a half a carb per egg.  So when I input foods like this, I will manually go in and create a "custom food entry" and add the food that way. I only have to add this custom entry once.  After then, that entry will be there as an option moving forward for me. ⁣

So, you may think that an egg doesn't make a big difference.  But with a food such as Splenda (bulk form), because people will often use 10 to 15 packets of Splenda a day thinking that it is 0 carbs because it's listed as 0 carbs per package when that isn't the case.  So many people get into a stall with their weight loss this way. ⁣

Today I am keeping the carbs real low and the food real basic.  With the Mother's Day weekend and eating lots of Keto treats, well, the scale is showing it. Plus I can feel some water retention.  So, back to basics today.  Oh, and drinking plenty of water😀⁣💦

While the ribeyes were being cooked on the grill I chopped up a bunch of cauliflower with a few spring onions, sprayed everything with avocado oil, seasoned well, and placed in a 375 degree onion for about 15 minutes. ⁣

This is one of my favorite ways to put low carb meals on the table when the weather is getting warmer and the days are longer.  By the time the steaks are finished cooking then resting, the roasted cauliflower is finished. And dinner is ready to be served. ⁣

Here are the macros for 1 cup of raw cauliflower. I always measure before I cook.  For a couple or reasons.  The marcros will change after cooking.  So I always stay consistent.  Measure before cooking.  Also, measuring before cooking ensues that I get to eat my food hot. ⁣
