I still remember, every time I used to make mutton curry, there was something that never allowed it to taste like mom’s recipe ( of course her love and care were the main ingredients in it💕).Then during my last visit to India, I made a point to ask mom to show me the step by step recipe and finally she taught me her delicious and finger-licking mutton curry recipe.
Of all the memories life has to offer, mother’s food holds a very special place, isn’t it??🥰

Recipe 
Ingredient 
2 medium Onion thinly Sliced
1 small sliced Onion for tempering 
1 tbsp ginger garlic paste( I love strong aroma of gg in my mutton curry, so I added 2 tbsp of it, you can add as you like)
500 g Mutton curry-cut
2 medium size Tomatoes chopped
1 Potato cut into medium size pieces (optional )
2-3 Green Chilli slit into half
2 tsp Coriander Powder
1 tsp Turmeric Powder
2 tsp Kashmiri Red Chilli Powder
1 tsp Cumin Powder
1 tsp whole jeera
Salt to taste
1 tsp Garam Masala Powder
2 tbsp Coriander Chopped

Instructions
Pressure cook mutton by adding sliced onion, tomatoes, gg paste, salt, all dry spices and water. Let it cook until 3-4 whistles, turn off the stove, let it cool for a while and add potatoes, cook it for few minutes for 1-2 whistles again. ( make sure potatoes are cooked well)
For tempering: In a shallow pan take 1 tbsp of oil, heat it, add jeera let it crackle, add sliced onion, fry it until light brown, add dry red chili powder and garam masala( if your mutton curry is spicy enough then skip red chili powder) and quickly add this to cooked meat. Let it cook for few mins and it is done.
Garnish it with fresh coriander leaves and serve it with roti or rice😋😊

The spicy green chicken pulao, bright greens like coriander and mint work together in this recipe with traditional flavour enhancers like ginger, green chillies and garlic to add more excitement to this chicken pulao. Relish every mouthful of this rice dish slowly soaked in the flavours of the spices and the green paste. 
Recipe 
For Green Paste
50 grams coriander leaves
25 grams Fresh mint leaves 
2 green chilies
2 tbsp yogurt
¼ cup water
For Pulao
2 cup basmati rice
300 grams chicken
2 medium onions
2 green chilies
1 tbsp ginger garlic paste
1 tsp coriander powder
½ tsp garam masala
2 tsp ghee
4 to 5 tbsp oil
1 bay leaf
2 cinnamon sticks
5 cardamoms
4 cloves
1 star anise
¼ mint leaves
Soak basmati rice in water for 30 minutes. Rinse for 2 to3 times before cooking
Grinding
Blend coriander leaves and green chilies together into a smooth paste adding curd and a little water. 
Now marinate chicken into this green paste for 2-3 hours.
To make Pulao
Heat oil in a pan, Put all the whole garam masala cinnamon, cardamom, cloves and star anise, sauté for a minute.
Add green chilies, sliced onions, salt and sauté until they become soft.
Put ginger garlic paste and sauté until the raw flavor goes.
Add marinated chicken pieces and mix well.
Cover and cook until the chicken is almost cooked. Pour water, add mint leaves and bring to a boil. Now here add few drops of green edible color if you feel your pulao should look more bright. Add soaked rice once the water begins to boil, cook it on a high flame for few minutes.
When the rice starts to bubble, turn the flame to low and cook until the rice is perfectly done.
A Perfect meal when serve with raita salad or plain yogurt😋

Anyone up for Hyderabadi Bagare Baingan?? This Eggplant curry accompanies really well with our all time favourite Biryani. We make this curry often for lunch and serve it with freshly made Rotis(Indian flatbread).
I had some leftover Biryani which I had made yesterday, so while juggling for lunch ingredients in the refrigerator, I noticed these bright and fresh eggplants and immediately, I knew what to cook today🙆‍♀️
The trickiest part of making the hyderabadi bagare baingan is to make the masala paste, which is made of peanuts, coconut, onions, tomatoes and sesame seeds. The bagare baingan cannot be called so without the masala paste.
Recipe 
Ingredients 
4 medium sized eggplants
1/2 tsp jeera
1/2 tsp mustard seeds
1 small onion chopped 
1 small tomato chopped
Bunch of curry leaves 
1 tsp red chili powder 
1 tsp coriander powder 
1 tbsp ginger garlic paste 
Salt to taste
For the masala paste
1 small onion chopped
1 small tomato chopped
1/2 cup fresh grated coconut
1/4 cup peanuts 
2 tbsp seasame seeds 
1 tbsp coriander seeds
1 tsp red chili powder 
Instruction 
Roast coconut until browned and remove on a plate. Dry roast peanuts, sesame seeds and coriander seeds until browned and fragrant and remove on a plate.
Add all the roasted ingredients along with chopped onion, tomato and chili powder in a blender and grind to make a smooth paste. Use little water if required.
Now wash the eggplants and wipe them dry. Make few slits into eggplants.
Heat oil in a pan. When the oil is hot, fry the eggplants till slightly browned. Drain and keep aside.
In the same oil, add mustard seeds, jeera, curry leaves.
Let them crackle and then add ginger garlic paste let it cook for a while then add chopped onion, tomato and cook it for few minutes, next is to add the grounded masala along with 1/2 cup water.
Cook the masala until oil starts to separate on the side of the pan. Add red chilli powder and salt.
Cook for few minutes, add water if needed. Add the fried eggplants and cook for another 2-3 minutes.
Garnish with fresh coriander.
Serve hot with roti or rice.🔥

Winning all the praise and love across the region, @ashasmiddleeast Asha’s celebrated their 15th anniversary by rolling out the first of four special menu created for the year. The new menu features ten new items and with the theme of “Three Indians and an English Man” which sounds very unique and intriguing.

It is the concept of four chefs going out on foodie trip from Delhi to Punjab, tasting different flavours and experiencing fusion in traditional Indian starters, main course and desserts. Each dish selected was one of the most known dishes on an indian dinning table but the little alteration or a major twist made them taste very different. Some of them were distinctive in taste and some in presentations.

Dishes were of variety and definition of Indian choices but certain were outstanding like the CRISPY BREAD PAKORAS (in the pic), filled with minty cheese and served with unique Banana tamarind chutney, which was the prime attraction of all. Dal Gosht was very different, texture and flavor were amazing. Drinks were tantalizing to the senses and the BIRYANIS were very ethnic and true to its name.

Overall the entire offering was quite new and the challenge of “The Three Indians and an English man” deserves true round of applause.❤️ Their special menu is just for 10 weeks(from March 7 until May 4), for more details check my story highlights under Asha’s Kuwait.

I LOVE blueberries. There is always a pack of frozen goodies in the freezer. And so I get to enjoy them whenever my blueberry cravings go high, like in this delicious and almost to easy Blueberry Coconut Mousse😍

Recipe
Serves 6
Ingredients 
250 grms frozen blueberries 
1/2 cup fresh blueberries for garnish 
1 cup heavy whipping cream 
1 cup yogurt
1 cup cream cheese, softened 
2 tbsp orange juice (optional )
2 tbsp sugar 
1/2 cup shredded dried coconut 
7-8 digestive biscuit (crushed )
Some fresh berries for garnishing 
Instruction 
In a pan over moderate heat , cook frozen berries along with orange juice , sugar and pinch of salt .Cooking , stirring , until thick pulp , about 5-6 minutes . Remove from the heat and let it cool completely .
In a glass bowl beat the heavy cream  to soft peaks . 
To this fold in the cream cheese, yogurt, shredded dried coconut and prepared berry pulp .
Now take the serving glass , layer the crushed digestive biscuit and spoon the mousse on it . 
Refrigerate it for few hours and serve it chilled , sprinkle some fresh berries and dried coconut .

Mousse makes a great entertaining dessert option , because you can prepare it the night before .

Nutella French Toast Roll-Ups. 
Exam season is going on and out of the blue, when my girl demands some special treats, this is what comes out unexpectedly from my kitchen.🙃
These French Toast Roll-Ups are filled with delicious Nutella, soaked into egg custard, sauteed until golden brown and then rolled in cinnamon sugar goodness!

Recipe 
Ingredients 
6 white bread slices
3 tbsp Nutella
1/4 cup whipping cream 
1 large egg 
2 tablespoons sugar
1 teaspoon vanilla extract
1 teaspoon cinnamon
3 tablespoons butter
Maple syrup for serving 🌟
Instructions 
1. With a rolling pin, roll each slice of bread until flattened.
2. Spread each slice of bread with a layer of Nutella and tightly roll up the bread slices.
3. In a small shallow bowl, whisk together the thick cream, egg, sugar and vanilla.
4. In a separate small shallow bowl, mix together the sugar and cinnamon and set aside.
4. In a nonstick pan over medium heat, melt the butter. Dip each Nutella French Toast roll-up in the cream and egg mixture. Cook the roll-ups in the pan for about 3 minutes, until they are golden brown and slightly crisp on all sides. Repeat until all the roll-ups are done.
5. Immediately after removing the roll-ups from the saute pan, roll them through the cinnamon-sugar mixture until all sides are well coated. 
6. Serve them warm with some maple syrup on the side.

Bengal gram (Chana dal) one of the perfect comfort food, I make sure that I include it regularly in my weekdays lunch menu as it makes a very wholesome and nourishing  meal. It's one of the most healthy and delicious recipes, boiled Chana dal simply sautéed with onion and tomato, tempered with Indian spices. 
A bowlful of chana dal is so quickly prepared using very few ingredients and spices, Isn't it amazing? 
Chana dal with left over khichdi is my happy go lucky food bowl any day😀

For this easy peasy recipe you need
Ingredients 
1 cup chana dal
2 chopped green chilli
2 chopped tomato
1 finely chopped onion
1/2 teaspoon ginger paste
1/2 teaspoon garlic paste
1 teaspoon red chilli powder
1/4 teaspoon garam masala powder
1/2 teaspoon powdered turmeric
1 teaspoon coriander powder
1/2 teaspoon cumin seeds
1 tablespoon coriander leaves
salt as required
1 cup water
Oil 
Instruction 
1. Soak chana dal in water for 2 hours. Wash it and transfer it in a pressure cooker. Add salt and 1 cup of water. Heat pressure cooker on medium flame and cook for 10 minutes. 
2. Meanwhile, heat oil in a deep pan, add cumin seeds and onions. Saute the onions for few minutes. Add ginger- garlic paste in the pan and add green chilies.
3. Now add salt,turmeric powder, red chilli powder, coriander powder, garam masala. Mix well, add chopped tomatoes into it, let it cook for 5 minutes. Now remove the lid of the cooker and transfer chana dal to the pan. Mix well and cook for 4-5 minutes. Once done, transfer the dal to a serving bowl and garnish with some coriander leaves. 
Serve hot with chappatis or rice.🤩

Recipe 
Ingredients 
1 cup grilled chicken (cut it into small pieces) 
2 cups cooked macroni 
1/2 cup carrot cut into strips 
2-3 pods of garlic chopped 
2 cups heavy whipping cream 
1/2 cup shredded cheddar cheese 
1/2 cup grated parmesan cheese
Olive oil 
Salt
Pasta herbs 
Instruction
Prepare macroni according to instruction on the box and be sure not to overcook.
Heat olive oil in the skillet, add chopped garlic, cook for 2-3 minutes.
Next is to add carrot strips and cook it for few minutes. 
Add heavy whipping cream and cheddar cheese. Cook over medium heat and whisk until melted.
Add Italian seasoning (pasta herb), salt and pepoer. Continue to whisk until smooth. Add the grated Parmesan cheese.
Bring it to simmer and continue to cook for an about 3-4 minutes or until it starts to thicken.
Toss prepared macroni and grilled chicken. 
Tada!! Enjoy😀

Dal puri is a soft and moist puffed Indian fried bread. Lentil curry(yellow dal)is a kind of staple food in all Indian households and leftover dal is a big dilemma🙈. This particular recipe is one in which puris are made of cooked dal. So the puris have the goodness as well as the flavour of lentils.

Recipe 
Ingredients 
1 cup leftover toor dal
2 cups brown flour
1 tsp carom seeds
1 tsp red chili powder
1 tsp coriander-jeera powder 
Some fresh coriander leaves chopped
Salt 
Water
1 tbsp Oil
Oil (for frying)
Instruction 
1. Combine all above mention ingredients into a big bowl and kneed into a smooth and tight dough.
2. Cover and keep aside for 15 mins.
3. Divide the dough into equal portion.
4. Roll out each portion into thin round disc shape.
5. Keep aside the puris, place it on a parchment paper for 15-20 mins.
6. Heat oil enough in the woke.
7. When oil is hot enough, gently add the puri one by one.
8. Cook till to puffed and slightly brown from both the side.
Serve hot with chutney or your fav curry. It’s a perfect lunch box recipe and breakfast when serve with a hot cup of chai😋😍
