#Friyay is a great time to try out this sweet and refreshing Cinnamon Dusted Pear Cider #recipe. It’s a great treat for your guests at your next barbecue. 
Serves 2


1 bottle Pear Koppaberg, chilled
1 pear, thinly sliced
1 tsp cinnamon
1 tsp brown sugar

Total time required: 5 mins

Preparation time: 5 mins


1) Set out 2 plates. Mix the cinnamon and brown sugar on 1 and pour a little water onto the other.
2) Dip the rim of the glass in the water, then into the sugar.
3) Half fill the glass with ice and place a few slices of the pear inside.
4) Pour the Kopparberg over the ice and enjoy.

Serves 6


500g plums, stoned and quartered
200ml cranberry juice
100ml port, or additional 100ml cranberry juice
50g caster sugar
150g fresh blueberries, plus extra to decorate
170g fresh raspberries, plus extra to decorate
8 slices 3-day-old thick-sliced white bread, crusts removed

Total time required  30 mins

Preparation time: 20 mins
Cooking time: 10 mins


1) Use 6 slices of bread to line the base and sides of a 1 litre pudding basin (reserve 2 slices for the lid).
2) Place the plums in a pan along with the cranberry juice, port (if using), and sugar and bring to the boil. Reduce the heat and simmer gently for 10 minutes until fruit is tender.
3) Add the blueberries and raspberries and stir well to combine.
4) Spoon the fruit and juice into the bread-lined basin, packing it down, then top with the remaining bread.
5) Cover loosely with clingfilm then sit a plate on top that’s just slightly smaller than the circumference of the basin. Place a weight (or a can of baked beans) on top of the saucer and allow it to stand overnight in the fridge.
6) To serve, run a knife carefully around the edge of the basin to loosen the pudding, and turn it out onto a plate. Top with fresh blueberries and raspberries.

British #Mackerel is at its best at the moment. Pick some up in store or online and try this Grilled Mackerel Salad #Recipe for a light lunch.

Serves 4


180g green lentils
4 mackerel, filleted
2 tbsp sunflower oil
½ tsp smoked paprika
150g radishes, sliced
2 carrots, coarsely grated
70g wild rocket
1 orange, juice and zest only
1 tsp horseradish sauce

Total time required: 30 mins

Preparation time: 5 mins
Cooking time: 25 mins


1) Bring a pan of water to the boil and cook the lentils for 25 minutes until tender. Drain well.
2) Place the 8 mackerel fillets on to a baking tray, skin side up, and cut 3 slashes into the skin of each. Mix 1 tbsp oil and paprika and brush over the top of each fillet. Grill for 6-7 minutes until cooked through.
3) Toss together the radishes, carrots and rocket, fold in the cooked lentils and divide between 4 serving plates. Top each with 2 mackerel fillets.
4) Whisk together the orange and horseradish sauce with 1 tbsp of the oil and drizzle over to serve.

2 aubergines
2 tsp smoked paprika
4 tbsp olive oil
2 red onions
2 sprigs fresh rosemary
2 tsp dried oregano
7 vine ripened tomatoes
12 pork chipolatas
6 tbsp maple syrup
2 tsp dijon mustard
2 tsp fresh rosemary

Total time required: 1 hr 5 mins

Preparation time: 15 mins
Cooking time: 50 mins


1) Heat the oven to 180°C/160°C fan/Gas 4. Chop the aubergines in half lengthways and cut into thumb-width slices. Place in a bowl with the smoked paprika and 2 tbsp of the oil and toss to coat.
2) Sprinkle 1 tbsp of the oil into a roasting tray and add the red onions, rosemary and aubergines. Sprinkle over the dried oregano and remaining oil.
3) Roast in the oven for 20 minutes then remove.
4) Add the tomatoes and continue to roast for 10-15 minutes or until the aubergines are golden brown and soft.
5) For the glaze, whisk together the maple syrup, mustard and rosemary. Toss with the sausages and barbecue for 15-20 minutes or until cooked through.
6) Place the sausages on top of the tray of veg to serve.

660ml bottled beer, use your favourite
250ml soda water
85g golden caster sugar
2 lemons, sliced

Total time required: 10 mins

Preparation time: 10 mins


1) Rinse the lemons under hot running water to remove any wax.
2) Place the lemon wedges, sugar and 100ml cold water into a food processor and whiz to a pulp.
3) Strain the mixture into a jug. Stir in the soda water. Sweeten to taste with extra sugar if needed.
4) Pour the juice equally into 6 glasses. Top up with beer and serve immediately.
