One of my favorite cooler weather recipes ❄️ Quinoa stuffed acorn squash! πŸ’› It's hearty, has great texture & is as pretty as it is delicious! 😍

Ingredients:
2 acorn squash (or small pumpkins)
2 Tbsp (15 mL) coconut oil
1/4 cup (60 mL) onion, diced
sea salt and pepper to taste
2 cups (500 mL) cooked quinoa
1 1/2 cups (375 mL) chopped fresh spinach
1/4 cup (60 mL) chopped dried apricots, chopped
1/4 cup (60 mL) dried cranberries
1/3 cup (75 mL) chopped toasted pecans
1/2 cup (125 mL) pomegranate seeds
1/4 cup (60 mL) chopped flat-leaf parsley
1/2 tsp (2 mL) ground cinnamon
2 Tbsp (25 mL) extra virgin olive oil
1 Tbsp (15 mL) lemon juice
2 tsp (10 mL) maple syrup

Directions: 
Preheat oven to 425Β°F (220Β°C). cut the squash in half , scoop out the seeds, then place the halves cut side down on a baking sheet greased with 1 Tbs coconut oil. Roast until soft, about 30 minutes.

Heat 1 Tbs coconut oil in a large skillet over medium heat. Add the onions and a pinch of salt and pepper and cook, stirring, until golden, about 15 minutes. Stir in cooked quinoa and add spinach. Remove from heat and cover, just until the spinach wilts, a minute or two.

Add remaining ingredients to the skillet and stir to blend.

Remove squash from the oven. Scoop out part of the flesh from two of the halves. chop, then stir into the quinoa stuffing. Spoon the stuffing into the remaining squash halves and serve.

Little shaken up as C and I were a block from where the attack happened in NY today. We had a Halloween play date on North End between Murray & Warren. We were waking back shortly after 3pm with a friend & her son and decided to cut underground through Brookfield place & oculus to walk indoors. Otherwise we would have had to cross the bike path on west street at/around that time. As soon as we got back outdoors of the oculus and crossed the street, all these cop cars were trying to aggressively fly by. I got to the next cross street and an armed cop, pointing a rifle, blew right by me bumping into me & stroller. Scared the πŸ’© out of me. I had no idea what was going on.  Then all these other armed police officers with rifles were everywhere, pointing them looking like they were ready to shoot. I didn't know what was happening. Then about 15min later my phone blew up with text asking if we were ok. We thankfully are πŸ™πŸ»My heart goes out massively to the victims & their families β€οΈπŸ’” my heart breaks for them.

I love hummus. πŸ’› But when I want to switch things up I make this White Bean & Rosemary dip from my book #kitchencures. It's smooth & savoury! 🌿 It's a great source of protein πŸ’ͺ🏼& this white bean dip packs in more fiber & less calories than your traditional hummus. πŸ‘πŸΌ πŸ”Ή1 1/2 cups cannellini beans (one 14-ounce can, drained and rinsed)
πŸ”Ή1/2 lemon, juiced (about 2 teaspoons)
πŸ”Ή2 tablespoons extra virgin olive oil
πŸ”Ή1 clove garlic
πŸ”Ή1/2 teaspoon cumin
πŸ”Ή1/2 teaspoon sea salt
πŸ”ΉPinch of cayenne pepper
πŸ”Ή1 teaspoon chopped fresh rosemary

Add all ingredients to blender or food processor (except rosemary) & blend. Transfer ingredients to bowl & stir in rosemary. Makes a great snack when served with raw veggies! πŸ₯’πŸ₯•πŸŒΆ

Travelling with a 13 month old is always an adventure! βœˆοΈπŸ‘ΆπŸΌ Even though my little guy & I have been on at least 20 flights together, it's one of those things that just doesn't get easier! However, I have mastered the carry-on travel essentials at this point. Here are my key inflight items I never board a plane without: β–ͺ️My YoYo @babyzenstrollers travel stroller. It folds with ONE hand (which is key - especially while travelling solo) and it's small enough to carry on the flight (which is also key) so I can save 20min NOT having to wait for it at gate check πŸ‘ŒπŸΌ
β–ͺ️ @babyganics face & body wipes PLUS their alcohol-free hand sanitizing wipes, to wipe things down... Christian likes to lick the airplane window as he's looking out πŸ€’πŸ™ˆ
β–ͺ️ @herschelsupply cooler lunch box to keep his snacks fresh (fruits, veggies, cheese) πŸŽπŸ‡πŸŒπŸ§€πŸ₯‘πŸ₯’
