Tirfhal aka Teppal aka Sichuan Pepper! 
There are many who love and get mesmerised by the subtle pungent aroma of -Tirfal, Teppal, Sichuan Pepper. The outer black colored pod in the dark black berry fruit is used in ample amount of cooking in Indian, Chinese, Indonesian, Tibetan, Nepalese and Korean cooking. The flavour is not pungent but very subtle which leaves a deep numbness on your palate once you eat it (even if by mistake). Every year we get abundant supply of these unique flavoured pods from our native place in Goa, Mumbai and Mangalore

Mostly the Pepper pods are used for dishes which have fish and coconut as the primary ingredient. 
Few dishes which we make with Sichuan Pepper are - Teppal Kadhi (With Coconut), Koddel (With Teppal), Aambat (With Teppal), Sukke (Stir fry) etc.

The Totapuri or Ginimoothi mango is a cultivar that is widely grown in South Indiaand is partially cultivated in Sri Lanka.  It also goes by the names 'Bangalora', 'Collector', 'Kallamai', 'Kili Mooku', 'Gilli', 'Mukku', 'Sandersha', and 'Thevadiyamuthi'. 'Totapuri' was imported to Florida in 1901 as Sandersha and in the 1960s as Totapuri. 
Urrak aka "Jungle Juice" is best had with lemon, salt,  a slit green chilly, Limca and Totapuri mangoes with a sprinkle of red chilly powder.

Summers are for peaches, berries and apricots. Apricots mature early than the others, fresh one has a hint of tang in them but I love their color and musky flavor.

The fruit is native to Armenia and the region is known for producing and using apricots since antiquity. Fields after fields filled with dried apricots in Turkey presents such a pleasurable sight.

Around 400 years ago these Turkish apricots traveled all the way passing through the mighty Himalayan mountains and reached “Hindustan“, it’s transporters were on the verge of establishing a new dynasty in a foreign land. Rest is history with the rise and fall of Mughals, but apricots stayed here. 
Apparently apricots seems to love this new humid and tropical country, but since its cultivar can not survive under the scorching sun, they shifted northwards, under the shade of mighty Himalayas.

Apricots finds its destiny as “Qubani ka meetha” under the tutelage of Nizams(Governor of realm) of Hyderabad and thus evolved into one of the most elusive dessert and find its rightful place in the “Shahi Dastarkhwan ” – a meticulously laid out ceremonial dining spread.

Today I give you only of my "Shahi  Concoctions", is what I would like to say...The Apricot and Rosemary Swizzle!
