If you’ve been shopping for cookbooks lately, you may have noticed Toronto chefs getting in on the action. @mattymatheson‘s new tome simply titled ‘A Cookbook’ dropped just a few weeks back.⁣

Matheson was once a well-known Toronto chef. Now he’s an international phenomenon, thanks to his boisterous disposition and equally brazen shows on @viceland.⁣
⁣
Whatever you think of his over-the-top personality, his cookbook is spectacular. The first section is dedicated to family, while the latter half focuses on cooking school (@humbercollege) and the Toronto restaurants where he learned his craft. ⁣
⁣
The behind-the-scenes stories - how @partsnlabour got started (“Oddfellows on Acid Was Our Businesss Plan”), the c-r-a-z-y times at @lapalettequeenwest (“Try Not to Burn Your Restaurant Down”) - offer a unique look at a time in restaurants before Instagram, before charcoal ice cream, before lineups for cheesecake, from the guy who brought us for starters: fried pig face, dandan noodles, Nashville hot chicken, and drool, the P&L burger.⁣

And you’ll be dog-earing recipes left and right. Some are wildly sophisticated (Bouillabaisse), some not so much (Bologna Bowl). I’ve already bookmarked Chow Chow, Lobster Pie, Cassoulet, Blanquette Ris de Veau, Pot-au-Feu, and Bavette.⁣

It’s a fascinating read. You’ll discover the wildly successful vegan sandwich he couldn’t stand to make, who sent him a cease-and-desist order for his dish, and well, you’re just going to have to read it to find out the rest.
Have you noticed the wave of Argentinean restaurants that have opened recently**? And more are slated to launch by year’s end. It’s def a thing. ⁣

One of the best I know is @vosrestaurante. The food is exhilarating: thick charred Argentinean ribeye with herbaceous chimichurri, smoke salted Argentinean prawns paired with charcoal tinged veg, butternut squash stuffed pasta drizzled with pistachio pesto. And wait ’til you see dessert and the wine list…⁣
