We have a shiny new website! Beautiful pics and hopefully an easy-to-negotiate and user friendly reflection of the new focus of the Bread School. This year should see lots more changing content, blogs and recipes. Happy New Year! 2018 was a year of great change for us here at White Cottage. Now in our sixth year, 2018 saw us finally make the transition to a full time baking school. We bid farewell to the many delis, farm shops, restaurants and cafes who had been our customers for many years, as we welcomed more than two hundred of you through our doors, eager to learn the secret to making that perfect loaf of bread. We have exciting plans for 2019: more collaborations with talented local chefs and bakers who will be joining us here at the baking school, new exciting bread workshops, including the introduction of a 2 day sourdough workshop in the Autumn and, of course, our residential workshop in France in October alongside chef, author and sourdough expert, Hilary Cacchio. Oh, and our new website launch is imminent. We hope to see some of you join us throughout the year. In the meantime, a very happy, healthy and creative New Year to you all!

Looking for cookbooks on sale for Christmas, and not just to prop up your panettone? The London Chapter of Les Dames d’Escoffier International @lesdamesintl – a philanthropic organisation of leading women in the worlds of food, fine beverage and hospitality - are having their annual cookbook sale in London at @luminarybakery on Wed 28 November 2018, 18:30 – 20:30, entry is £10 (inc a glass of wine) and there will be lots of name cookbooks at bargain prices.  Net proceeds, and all kind donations, will benefit @luminarybakery - a social enterprise that offers opportunities for disadvantaged women to build a future for themselves by completing a basic baking skills course - with their building fund to create a second café. Teaching. It’s all about connection. In our workshops, we concentrate on those connections: with the earth, the farmer, the grain, the miller; with our hands, with our bodies. With each other. It is our joy to watch bakers and novices alike as they grow in confidence and craft beautiful bread from the humblest ingredients: flour, water, salt.

Prepping for this morning’s Intro to Sourdough workshop. We’ll also be making some cheese and garden herb soda bread for lunch, using beautiful Irish flour, flavoured with a mild acidity from some old leaven. Last day at @terroirhospitality. 7 days of  immersion in all things food; @terroirtalk from seed to plate. The history, politics and future of food culture . We gathered as consumers, farmers, producers, chefs, restaurateurs, historians and writers. We left as friends.
