CAMBRIDGE PRIDE! I can't believe I'll be missing Cambridge's very first Pride today. May it be the first in a  long and colourful tradition, celebrating diversity, inclusivity and love. This is my small way of showing my support - a rainbow challah - as I can't be there in person. All natural colours - beetroot, carrot, saffron, matcha & spinach, and bluberries. Stella Pereira will be joining us again in July for one of her fabulous Food Styling and Photography sessions. Advance booking means we only have a handful of places available. The day will focus on photography as a means of story telling, using the wonderful seasonal produce on offer from local markets and the cottage garden. Change of plan! After yesterday's deluge, we decided to grab a piece of the good weather whilst we could and cobbled together an impromptu picnic at lunchtime today: this morning's sourdough - this one a mix of ancient grains (spelt, kamut, einkorn and rye) and, yes, I nibbled some before I even sent down the rug and, no, I'm not sorry. Keeping it simple is sometimes best. Some bread, some cheese (@fenfarmdairy Baron Bigod), fresh fruit and cordial (the very last of 2018's elderflower). Let it rain this afternoon if it must, we've stolen our piece of sunshine and locked it away. I absolutely love this post from @wildlycuriousuk. Based down the road from us here at White Cottage, these guys gather groups of kids (and sometimes adults) and take them back to basics - outside, working together, learning survival and bushcraft. And what could be more fundamental than throwing some dough on a fire? These dough sticks are genius! 
Get the kids in your life baking #realbread! It's not like pastry, or cakes or scones. You're not seeking that friable crumb or melt-in-the-mouth, light-as-air texture. Dough is doughty stuff. They can whack it about (even get it a bit grubby) and it will be no worse for it. In fact, whacking is to to be actively encouraged whilst kneading! Whack away!

Found some 8 day old yeasted demonstration dough at the back of the fridge, neglected and forgotten about. Was about to throw it away (always goes against the grain!) when I çhanged my mind. I decided it wasn't too acidic, after all. It could live again! Stretched a few pieces out and threw them on the griddle. Knocked up a quick kale and broccoli soup from what was in the fridge, et voila! A quick and (almost) instant supper! I often incorporate an old dough into a new one, but wouldn't normally push the old dough out so far, expecting it to become too acidic in flavour. Just goes to show. Last November, I spent the most incredible week in the company of wonderful people at the Castello di Potentino, nestled in the Tuscan hills of Italy. Having received the warmest welcome, I was immersed in a week of cooking, exploring, eating, drinking and good conversation, as we broke bread together and bonded over our common passions. I am delighted to be returning in November this year. I will be teaching at a culinary workshop, focusing on Italian Baking and Bread-making, but encompassing all the delights that Potentino has to offer - the scenery, the walks, the wine, the olives, the cheeses and salumi... Many of you who have been on a workshop will have heard me talk about Cass Ellis and her beautiful paints and furniture. It's her paint on the walls of the bakery and it will slowly creep round the rest of the cottage if I have my way. Everything about her work is calm and beautiful and inspiring. She came to visit recently with her photographer, Kalina, and took some wonderful images. Everything always looks rather rustic and ramshackle to us, but Kalina found beauty in all the nooks and around the doorways. I'm very grateful to Cass for including me in her portrait series. It's all about Home: what home means to us and how we create a space for ourselves and our families that allows us to grow and thrive. Her photography & food styling workshops, set in @whitecottagebakery, are a feast for the senses. She will teach you all the finer details of composition, light and shade; the way shadows dance across the walls and the glory a lazy drizzle of honey off a large wooden spoon.

More than that though, Stella is the most kind and patient mentor. You can hardly help but get stunning images from her setups, but she is nevertheless buzzing with joy at the successes of her students after every workshop.

Go on a food photography course in a gorgeous bakery haven where everything is beautiful and there are buns and Moscatel and did I mention the Moscatel? My new favourite thing. Anyway, I’ll be spending tomorrow redecorating the house, throwing away all my plates & bowls whilst whittling new cutlery out of our too-un-antique furniture. Sigh... I’m nearly an antique though.
